Baked Egg & Avocado
Pre-heat oven to 425 F
Cut your avocado in half
Take out the seed
Slice the bottom of your avocado so it sits on your baking sheet
*you may want to scoop some of the center to fit your cracked egg
Crack an egg in the center
Sprinkle with a pinch of salt and pepper
Bake 15 mins or until egg is cooked
Garnish with fresh Cilantro
Benfits: Avocado is high in Monosaturated fatty acids, great ability to lower cholesterol, also high in fiber and potassium. Eggs are a great source of protein, rich in the B-complex vitamin choline which helps reduce inflammation.
