Not Mushroom For Pasta

Gluten Free Pasta in a Creamy Mushroom Sauce



This is so delicious and so easy to make!!! 

Bring lightly salted water to a boil.

While the water reaches a boil, you’ll have the time to prep the Sauce. 
First, sautee in olive oil chopped red onion and a clove of garlic, cook until slightly golden. Add 1/2 cup vegetable broth, let simmer. Add salt and pepper to taste. Add chopped mushrooms and sliced Kalamata olives and continue to simmer.. I add red chili flakes for some heat. Once the mushrooms have cooked down slightly, add 1/2 cup almond milk and stir gently. Let the sauce simmer more. Sprinkle with parm and stir.

By this time your water has come to a boil and you have added your pasta. I choose gluten free pasta which take about 8 mins to cook.

Lastly, I toss some chopped spinach leaves to the broth for a little more nutrients. 

Place pasta in your bowl and top with your delicious sauce and a little parm.

* this dish came about because I literally had a little pasta, a few pre-sliced mushrooms, a quarter of an onion, a quarter of a jar of Kalamata olive, some washed spinach, the tiniest amount of vegetable broth, almond milk and Parmesan cheese... And created something I’ve never made before. I was very pleased with the outcome so therefore I share with you. It’s fun to get creative with the only tings you have in the fridge!!
